Lasagna Soup

Have you been looking for a delicious soup with a different twist? Possibly made from leftovers? Well, bring the family together and enjoy this hearty lasagna soup. Add a cheesy grilled sandwich and smiles will be full!
Ingredients:
1/2 lb. Hamburger, ground
1/2 lb. Sausage
4 Large Tomatoes, roasted
1 Tbsp. Olive Oil
1 Small Sweet Onion, finely diced
2 Large Carrots, skins on, finely minced
2 Small Cloves of Garlic, minced
Salt & Black Pepper to taste
2 cans Tomato Paste
4 cups Beef Stock
2 Tbsp. Sugar
3 Tbsp. Oregano, dried
1 Tbsp. Roasted Red Pepper Flakes
1/2 Tsp. Nutmeg
1/3 cup Parmesan, grated
1/2 box Radiatore Pasta
Topping:
* 1 Egg
* Ricotta Cheese
* 1 Tsp. Cracked Black Pepper
* Pinch of Salt
* 1 Tsp. Basil, freshly chopped
Begin by roasting the tomatoes. Add the tomatoes to a blender and puree; smooth but with some chunky pieces for texture.
In a large soup pot, heat olive oil on medium heat. Add the onion and carrots and saute until onions are translucent.
Add the garlic, and saute for an additional 1 -2 minutes; just until the garlic becomes fragrant.
Season with the salt and black pepper. Mix in the pureed tomatoes, tomato paste, beef stock, and sugar. Bring to a simmer and cover.
In a skillet, brown together the hamburger and sausage. Drain and break into bite size crumbles. Add to the soup.
Incorporate the oregano, red pepper flakes, nutmeg, and parmesan cheese.
Add the pasta to the soup and cover. Cook, stirring occasionally for 15 - 20 minutes or until pasta is tender.
In a small bowl, mix the ricotta cheese, egg, pepper, salt , and basil together. Drop by spoonfuls across the surface of the soup.
Cook covered for an additional 10 minutes. Remove from heat and serve.
Garnish with fresh chopped parsley and fresh grated Parmesan or Romano Cheese.
