Lemon Cheese Cake



  • 15 Graham Cracker Crumbs (full crackers)

  • 1/2 cup Butter, melted

  • 1/4 cup Sugar

  • 1/2 tsp. Pink Sea Salt


  • 4 pkg. Cream Cheese, room temperature

  • 1 cup Sugar

  • 3/4 cup Sour Cream

  • 1 Tbsp. Vanilla, extract

  • 3 Eggs

Lemon Pie Filling


Preheat oven 325*.

In a large bowl, mix the graham crackers, butter, sugar, and salt together thoroughly. Press into the bottom of your pan, (9 x 9 works best). Place into oven and bake for 8 to 10 minutes.

For the Cheesecake:

In a mixer bowl, mix the cream cheese and sugar on medium speed, until smooth.

Add the sour cream and vanilla, a little at a time. Be sure to let the mixer do it's job and make it smooth.

Add the eggs, one at a time; until mix thoroughly.

Pour mixture over the crust and bake, 65 minutes or until lightly golden on top. Remove and let cool.

Add the lemon pie filling on top of cheesecake and serve cool.
