Preserving Herbs
Having preserved herbs on hand at just the right time, is crucial to any recipe. It is fast and easy to do.
Simply gather the herbs from you garden.
Clean said herb with a wet cloth and finely chop.
Place chopped herbs into an ice cube tray.
Cover the herbs with one of the following: olive oil, broth, or water.
Place into freezer. Once frozen, transfer to a freezer lock bag and store in freezer until needed.
Freezing the herbs preserves the oils that give the herbs their flavors. When storing herbs in the freezer, remember to date them. They can only stay in the freezer for up to 12 months.
If you want to dry the herbs first, then you will need to place the washed herbs onto a sheet pan. Preheat the oven on low heat - 165 degrees. Place into oven and cook 3 - 4 hours or until herbs are dry and crumble easily.
